Calzones

I needed a quick dinner
for Josh before he went to play
softball this evening.

I decided on calzones.
What a good choice- you
would have though I was the
Queen of England. He ooooeedd
and aaahhhddd over them for a while.
So if you want to make your husband
happy after a long day- try these
He might even start asking for 
calzones instead of taco salad.



Divide dough recipe into four lumps.
Roll out and top half of the circle with pizza sauce and toppings.



Fold in half and pinch edges shut. Place on greased tray.



 Bake at 375 until done. Around 15 minutes.



 Serve hot with whatever you please.

I just used my stromboli dough recipe,
that I use for lots of things.

Broccoli and Ham Puff

Sorry for the recipe drought.
 
I had left-over ham from
Sunday lunch and wanted 
to use it up. I thought of a
ham and asparagus recipe
from a local cook book and
used broccoli instead of asparagus.



 Saute broccoli and ham in butter until broccoli is slightly soft.


Mix together puff and bake until golden brown.


 Add your creamed filling on top of the puff
and poof you have a meal.


Simple and delicious.



Broccoli and Ham Puff

Puff
1/4 cup butter
1 cup flour
4 eggs
1 cup milk
1/4 tsp. salt
1/8 tsp. pepper

 Melt butter in a large cast iron skillet
or 9 x 13 dish. Beat remaining ingredients together
and pour into dish. Bake at 425 for 20-25 minutes
until puffy and golden brown.

Filling
3 Tbsp. butter
4 cups fresh broccoli, chopped
2 cups cooked ham, chopped
2 cups milk
3 Tbsp. flour
1/3 cup sour cream
1 tsp. lemon juice
1/4 tsp hot sauce
1 cup cheddar cheese, grated
salt and pepper to taste

Melt butter in a skillet and add broccoli and ham. Saute
until broccoli is slightly soft. Whisk together milk and flour.
Add to skillet and stir until thickened. Reduce heat and
add sour cream, lemon juice and hot sauce.
Sprinkle in some salt and pepper if it needs it.
Pour into puff and top with cheese.
Return to the oven for a few minutes
to melt the cheese.

It's more like a fluffy pancake.

Belize

Things are still getting back to 
normal since our trip to Belize.
After missing our first flight we 
finally arrived in Belize the next day.
We attened the wedding and
were planning to head to the Cayes
on Monday. Well, hurricane Ernesto
had other plans for us. They were 
evacutating the island and advised
us not to go. So we backed our flights
up to Sunday and were able to head
to the Cayes on Wednesday.
Then on the way home we missed a connecting
flight due to our plane having mechanical
erros and leaving late from Houston.
Amidst all this we really did have a good trip.
Not to mention the heat-
90 degrees with 90 percent humidity.

Vacation Awaits

We are heading out tomorrow 
morning for a wedding in Belize.
The girl I claim as my sister, Lynette,
well... her sister is getting married.
If you are lost I understand.

We are heading to San Pedro Cayes
on Monday and will stay until Thursday.

Needless to say I'm super excited.
I hope to post recipes someday.

Until then...


 Belize has the 3rd largest coral reef in the world.
Yes, snorkeling is on our to do list.
