Looking for a special cake
for your Christmas dinner?
A chocolate cake is one
of the funnest and easiest
cakes to dress up.
Today I used my basic chocolate cake
recipe and whipped up some
icing with some of the same
ingredients as tiramisu.
Slice the two cake layers in half.
Simple, easy and delicious.
For this one I just used creamy white icing and topped it with
seedless raspberry's and drizzled chocolate.
Chocolate Cake
2 cups flour
2 cups sugar
1 tsp. salt
1 tsp. baking powder
2 tsp. baking soda
1/2 cup cocoa
1 cup oil
1/2 cup milk
1/2 cup half and half
2 eggs
1 tsp. vanilla
1 cup of hot coffee*
*I heat 1 cup of water in microwave and add 1 very
rounded table spoon of instant coffee.
Mix together in order listed. I usually have the mixer on slow the
whole time I mix up this cake. Pour batter into 2 greased
and floured 9 in. cake pans. Bake at 350 for 30-40 minutes,
or until center springs back when touched.
Cool cakes and slice each layer in half.
Then you know how to do the rest.
I don't think you need directions for icing a cake.
Tiramisu Icing
1- 8 oz. container of Mascarpone Cheese
2/3 cup 10x sugar
2 tsp. coffee liquor
2 tsp. tiramisu syrup
1 tsp. vanilla
2 cups whipping cream, whipped
Mix together Mascarpone Cheese, 10x sugar, coffee liquor,
tiramisu syrup and vanilla. In a separate bowl whip whipping cream
until it holds light peaks. Add too Mascarpone Cheese mixture and
beat until combined. Don't over whip- the texture will get funny.
Creamy White Icing
1 cup Crisco
4 cups 10x sugar
1/2 tsp. salt
1 tsp. vanilla
4 Tbsp. milk
Mix until creamy.
