My sister brought these bars on our camping trip. I thought they were amazing... so amazing I made two recipes of them today.
They are so moist and not too sweet. It's a win-win situation.

Chocolate Zucchini Bars
2 cups zucchini, shredded
1 1/2 cups sugar
1/2 cup oil
2 cups flour
2 cups flour
1/2 cup cocoa powder
1 tsp. salt
1 1/2 tsp. baking soda
Mix together zucchini, sugar and oil.
Add remaining ingredients and stir with spoon, then spread
into a greased 9 x 13 pan. Bake at 350 for 30 minutes.

Whipped Ganache Frosting
1/2 cup heavy whipping cream
1 cup chocolate chips (I used semi sweet)
Combine in a small saucepan and heat until chocolate is smooth
and melted. Chill in refrigerator. Whip until peaks form
and spread on cooled bars.

I just made a batch of these and have to force myself to stay out of the kitchen...two and counting...(and mine are even whole wheat, of course ;-) Thanks for the super simple and delicious recipe. I'm always on the prowl for zucchini camouflage around here!

ReplyDeleteMy 9 year old grandson and I just made a double batch of these. We are calling them "Secret Agent Brownies" b/c we are sneaking zuchinni in without people knowing. Shhh! Don't tell.
